Texas’s Red Grapefruits
Red Grapefruits are so revered in Texas, they’re actually the state fruit. That’s really saying something when your state makes up nearly 10% of the nation’s population. Try this simple red grapefruit recipe that makes a refreshing dessert
4 red grapefruits
1/3 cup unsweetened coconut
1/3 cup agave nectar
2 tbsp organic coconut oil
1/8 tsp pure vanilla extract
¼ cup low fat yogurt
Segment and peel each red grapefruit wedge. Divide between 4 plates. Warm coconut oil and agave nectar over very low heat. Pour in vanilla extract and stir. Drizzle over fruit while warm. Top with a dollop of yogurt. Garnish with shredded coconut.
