Here are 3 simple substitutions that can keep you enjoying your favorite foods – but in a lighter, veggie version:

Spaghetti Squash – as a substitute for pasta, fork out the insides of a steamed or baked spaghetti squash, then top with your favorite sauce. Loaded with fiber and antioxidants, you’ll not only save calories, you’ll also be giving your immune system a boost.

Portobello Mushroom – as a ground meat substitute, either chop up and add to tomato sauce or leave whole and grill as burgers. At only 22 calories per  serving, portobello mushrooms are loaded with a variety of B vitamins that also help build up your immune system.

Eggplant – when making lasagna, skip the many layers of calorie-dense pasta and use thinly sliced eggplant instead. Besides the immune boosting antioxidants, eggplant skin is packed with nasunin – a compound found to stimulate brain cell membranes.
