Alabama’s Pecans
With their distinctively savory taste, Pecans are a nutritious source of protein and polyunsaturated fats. Along with iron and calcium, Pecans are loaded with Vitamins A, B – including 12% of daily thiamin – and C. They’re also excellent sources of potassium and phosphorus. At only about 10 calories per Pecan half, even a hearty handful delivers less than 100 calories. Grown in Alabama, Pecans help lower blood pressure and increase cardiovascular health. They also help prevent a variety of cancers and boost the immune system. Besides eaten as a snack, Pecans can be used in a variety of savory dishes.
Try this pasta with pecans and zucchini dish
1 cup chopped pecans
16 oz whole-wheat pasta
2 tbsp olive oil
1 lb shredded zucchini
2 chopped garlic cloves
1 cup low fat yogurt
¼ cup chopped basil leaves
Prepare pasta according to package directions. Warm pecans over medium heat, stirring until toasted – approximately 6 minutes. Sautee garlic and pecans over medium heat. Add yogurt. Toss with pasta and basil leaves. Season with freshly ground pepper and salt to taste.
