Pennsylvania’s Mushrooms

Half of America’s mushrooms sprout up in just one small area of Pennsylvania – Kennett Square. That 1.1 square mile spot produces more than 1 million pounds per week, dubbing it the Mushroom Capital of the World. That’s wonderful because all of those fabulous fungi are loaded with a variety of B Vitamins – riboflavin, niacin, folate and B6. They’re also packed with important minerals – selenium, ergothioneine, copper and potassium. They’re also a low calorie way – just 20 – to get 3 grams of protein into your diet.

Try this marvelous ‘meatless’ Mushroom Meat recipe:

3 cups chopped mushrooms

3 cups chopped eggplant

2 cups chopped onion

¼ cup olive oil

2 eggs

2 tbsp balsamic vinegar

1 tsp garlic powder

1/8 tsp black pepper

Mix all ingredients together in a food processor, with a large fork or even with your hands. Use as a ground meat replacement in your favorite recipe – burgers, meatloaf, meatballs or pasta.
