Colorado’s Pinto Beans

Colorado may be famous for having the Mile High City, but it’s also home to the self-proclaimed Pinto Bean Capital of the World. Not because it grows the most, but according to local lore, the best Pinto Beans have grown there for more than 1,000 years. Besides having 285% of daily molybdenum – a vital catalyst that helps break down amino acids – Pinto Beans also are loaded with folate, fiber and copper – along with a long list of other important nutrients. Along with stabilizing blood sugar and providing iron for energy, Pinto Beans help decrease heart attack risk and help prevent certain cancers. Being that ‘pinto’ means ‘painted’ in Spanish, consider ‘highlighting’ your dessert with this modified version of Dove Creek’s long-time famous Pinto Bean Sauce.

Pour this Pinto Bean Sauce over fruit or mix with yogurt

1/3 cup cooked pinto beans

1/4 cup coconut oil

1 cup agave nectar

½  tsp vanilla

1 cup water

¼  tsp salt

Mash cooked beans while adding water. Mix with coconut oil over low heat. Continuously stir for 8 minutes on medium high heat until thick. Stir in salt, nectar and vanilla. Serve warm or chilled.
